Fluffy Pancakes

Trinnu crawled into bed with me this morning asking for her favorite Fluffy Pancakes for breakfast. We decided this would be the perfect day to begin sharing our love infused creations! These pancakes are a healthy Vegan twist on a recipe my Mother used to make. 
Fluffy Pancakes
makes about 10 medium sized cakes
1 1/4 cup organic whole wheat pastry flour
3 teaspoons baking powder
1 tablespoon organic unrefined sugar
1 1/2 teaspoons *Egg Replacer mixed till fluffy with 
 2 tablespoons water
1 cup organic soy milk
2 tablespoons organic sunflower oil
1 teaspoon organic vanilla extract
Earth Balance organic buttery spread
 Organic grade B Maple Syrup 
Sift together all dry ingredients. Combine all wet ingredients. Add wet mixture to dry, stirring till moistened. Batter will be a bit lumpy. 
Spoon out onto preheated and lightly oiled griddle. Flip when sides of cake are stiff and bubbles in middle are beginning to break. Try one very small drop of batter on griddle to check for temperature. It should sizzle. 

Secret tip: After the first batch, while the rest of the cakes are cooking, place a plate on top of heated toaster over to keep cakes warm without drying them out. Put Maple Syrup in measuring cup on top of oven as well to warm the syrup. 

When ready to serve, spread on Earth Balance organic buttery spread and pour on the syrup to your taste. OHHH so FLUFFY!!

What makes this Recipe Healthy? 
Organic Whole Wheat Flour:
Whole wheat is a good source of B vitamins,Vitamin E, magnesium, iron and fiber, as well as other valuable antioxidants not found in some fruits and vegetables. Most of the antioxidants and vitamins are found in the germ and the bran of the wheat which is absent in white flour.
Organic Grade B Maple Syrup:
The vitamins present in pure Grade B maple syrup are PP (Niacin), B5 (Pantothenic Acid), B2 (Riboflavin), Folic Acid, B6 (Pyridoxine), Biotin, and Vitamin A. Grade B Maple Syrup is also an excellent source of the minerals Manganese and zinc.
Organic Soy Milk:
Soy milk provides all the benefits of cow's milk, without the butterfat, which is unhealthy, the milk protein (casein), which can increase mucus production and irritate the immune system in some people, and milk sugar (lactose), which can cause digestive distress if you lack the enzyme that breaks it down. Since many soy crops are heavily treated with pesticides and are genetically altered buy organic soy products whenever possible.
